Description

Carrot Halwa (or Gajar ka Halwa) is one of the most popular Indian desserts. The traditional Halwa recipe has milk and ghee (clarified butter). Here is a recipe for a tasty Carrot Halwa with no dairy and no oil. Several of our friends tasted this and were pleasantly surprised by how good it is.

Servings 8-10, Cooking/Prep time 30 mins.

Method:

  1. Make cashew paste and Date paste first. See below.
  2. In a pan, sauté the shredded carrot for 8-10 minutes, stirring intermittently.
  3. Add cashew paste (see below) and mix well.
  4. Let it cook for 2 minutes then add the almond milk. We use homemade almond milk for this recipe.
  5. Stir it for 2-3 minutes.
  6. Add 1 1/2 cups of date paste (see below). Mix it well.
  7. Let it cook for 3 minutes.
  8. Add the elaichi/ cardamom powder and stir it well.
  9. Dry roast cashews and raisins in a separate pan. Add these to the halwa.
  10. Transfer to a serving bowl. It can be served at room temperature or chilled.

To make Cashew Cream: Blend 2 ounces or 60 grams of cashews in a small grinder with 4 tablespoons of water. This will make 4 tablespoons of cashew paste.

To make Date Paste: Blend 1 1/2 cups of dates with 3/4 cup of water. This will make 1 1/2 cups of date paste.

3 cups or 400 grams of carrots, shredded
2 tablespoons of cashew cream (see the method section for the recipe)
1 cup of almond milk
1 1/2 cups of date paste (see the method section for the recipe)
10 cashews
10 raisins
1/4 teaspoon of elaichi (cardamom) powder
