Carrot Halwa (or Gajar ka Halwa) is one of the most popular Indian Desserts. Traditional Halwa recipe has milk and ghee (clarified butter). Here is a recipe for tasty Carrot Halwa with no dairy and no oil. Several of our friends tasted this and were pleasantly surprise how good it is.
Servings 8-10, Cooking/Prep time 30 mins.
Make cashew paste and Date paste first. See below.
In a pan, saute the shredded carrot for 8-10 mins, stir intermittently. Add cashew paste (see below) mix it well. Let it cook for 2 mins then add almond milk. We use homemade almond milk for this recipe. Stir it for 2-3 mins. Add one and half cup date paste (See below). Mix it well. Let it cook for 3 mins. Add elaichi/ cardamom powder and stir well.
Dry roast cashews and raisins in a separate pan. Add these to the halwa. Transfer to serving bowl. It can be served at room temperature or chilled.
Hints: Cashew cream – 2 ounces or 60 grams of cashews when blended in a small grinder with 4 Tablespoons of water will make 4 Tablespoons of cashew pate.
Date Paste – one and half cup of dates when blended with 3/4 cup of water makes one and half cup of date paste.
