Phirni (Rice pudding)

Description

Phirni is creamy dessert made with rice and milk.  It is a traditional North Indian dessert made for special occasions.

Servings: 6-8

Method:

Soak 1 cup rice for half hour. Strain the water. Roast rice in the oven at 180 degrees centigrade or 375 degree Fahrenheit for 10 mins. Let the rice cool down. Grind it to the consistency of coarse granules. Keep the rice granules aside.

In a pot boil 1 and half liters of non-dairy milk for 5 mins. Add rice granules gradually, while stirring – cook for 15 mins. Add one and half cup date paste and mix well. Let it cook for 5-7 mins. Add jaggery and mix well. Add rose water,  elaichi powder and saffron. Stir well.

Let it cook for a minute and transfer to serving bowl.

In a separate small pan, dry roast cashews and raisins for a minute. Sprinkle them on the phirni.

 

Ingredients

1 cup of Brown Rice (dry weight - 200 grams)
1 and half liter (6 cups) Soya milk (or almond milk)
One and half cup of date paste
1/2 cup to one cup Brown Sugar (Jaggery)
2 teaspoons Rose water (optional)
1/2 teaspoon Elaichi powder
pinch of saffron (optional)
20 cashews (15 gms or 1/2 ounce)
20 raisins or kismis
