Barley Stir-fry

Description

Method:

  1. You can cook barley in instant pot or on stove top (according to instructions on package)
  2. Heat the pan on medium heat. Add cumin and let it splutter. Add onions, green chillies, salt and saute it for a min.
  3. Add rest of the vegetables and saute it for few minutes. Add turmeric, chilli powder (if not using chillies) and stir the vegetables until they are softened a bit.
  4. Add barley and stir it together. Garnish it with cilantro

Ingredients

2 cups cooked barley
1/4 cup diced onions
1/4 cup diced carrots
1/4 cup diced green/yellow peppers
1/4 cup corn
1/4 cup diced celery
1/4 cup peas
2 Tbs chopped cilantro
salt to taste
1/8 tsp turmeric powder
1/4 tsp cumin
2 green chillies (or 1/2 tsp chilli powder)
